KICK ASS HUMMUS

Tata's Homemade Hummus
I am always disappointed in store bought hummus.  They are usually watery and skimp on the tahani or quality olive oil and taste bland.  My version of hummus is none of those things!  It is rich, creamy, flavorful and full of the good stuff i.e. tahani, olive oil, fresh garlic and lemon juice.  It is great as a spread or as a dip for crackers and raw veggies.  You can also add it to sandwiches.  The other nice thing is it is SUPER EASY TO MAKE and way less expensive than store bought hummus.


This is my favorite way to eat hummus (see picture above) with fresh veggies from the local farmer's market.



Ingredients: 
1 (14 oz) can organic garbanzo beans or you can soak dry beans, cook them and then use an equivalent amount
1/3 cup tahani 
1/4 cup olive oil
1/4 cup fresh lemon juice*If you don't have fresh lemons you can use lemon juice
1 1/2 tsp sea salt
Optional: 1 to 2 cloves fresh garlic diced.  I love the kick that the raw garlic gives this hummus.




Directions:
Add all ingredients to a food processor.  Blend on high for about a minute.  Scrape the sides.  Taste your hummus and add more lemon juice or sea salt to your liking.  Blend again for about 30 seconds.  Your hummus should be creamy and look like the picture below. 

It's that easy!! You can eat your hummus immediately or store it in an air tight container for up to a week in the fridge.  

Optional: You can make a specialty hummus by adding one of the following: sun-dried tomatoes, pine nuts, roasted red peppers, goat cheese, roasted garlic or anything else you can think of!

Optional garnishes: Right before you serve your hummus you can drizzle it with olive oil and or sprinkle a little paprika on it.  Or sprinkle with diced parsley.  

Below are some ideas for presentation and/or what to serve your hummus with.  Hummus goes well with warm pita wedges; pita chips; corn chips; fresh veggies; french bread; toasted bread and crackers.
