Paleo Dark Chocolate/Coconut Pudding

Paleo Dark Chocolate/Coconut Pudding


I would only suggest this recipe if you are doing the paleo diet or can’t do dairy or sugar otherwise stick with the real deal!! I have to be honest I think paleo desserts taste like crap so I tried to make a paleo dessert that was tasty enough for me to eat!  Hope you like it!

Ingredients:

1 cup coconut milk (full fat) from a can
1/2 cup avocado*
*If you use too much avocado it will give your pudding a weird avocado aftertaste-so start with a 1/4 cup make the whole pudding and add the remaining 1/4 cup at the end if you are satisfied with the taste.  The avocado is important in this recipe as it give the pudding its awesome texture.
¼ cup honey + 1 tsp* 
* you can add more honey to your desired level of sweetness.  Also you can substitute ripe banana for the honey however it will affect the taste of your pudding.  Banana is a powerful flavor.
½ tsp pure vanilla
¼ cup unsweetened almond or coconut milk (the liquid kind)
2 TBS unsweetened shredded coconut
3 TBS dark cocoa powder

Directions:
Add all ingredients to a blender.  Put cocoa in last so it doesn't stick to the sides or the bottom.  Blend.  

Add a little more almond milk if needed.  Taste.  Add a little more honey if you’d like it sweeter.  Should be the consistency of thick pudding.  Put in small glass serving bowls.  Top with a little shredded coconut for decoration.  Chill for at least 2 hours in the fridge.  Serve!
