SUPER LOW SUGAR CUPCAKES FOR THE LITTLE ONES

SUGAR FREE BANANA CUPCAKES W/ LOW SUGAR CREAM CHEESE FROSTING


My friend asked me to come up with a super low sugar dessert for her 3 year old's birthday.  So I went with a banana cake that has no sugar and is simply sweetened by the bananas.  And choose a cream cheese frosting where the cream cheese can be the majority of the frosting base rather than the sugar.  In 12 cupcakes there is only 1/2 cup sugar total (which is WAY less than any breakfast muffin)!!!  But don't expect the same sugar overload sweetness of regular cupcakes.  This cupcake is plenty sweet for kids but for adults expect the sweetness of a breakfast muffin on the less sweet side.  Thus why I made a separate batch of dark chocolate/salted caramel cupcakes for the adults!!  This recipe is really easy and can be made a couple days prior as long as you store your cupcakes in an air tight container.  Because this recipe is so simple it is a great one for the kids to make with a little guidance.  Have fun!



Banana Cupcakes 

Yield: 12 servings. 
Ingredients:
  • 2/3 cup ripe mashed bananas
  • 1/2 cup butter, softened
  • 3 eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3/4 cup milk
  • optional: 1 cup chopped walnuts

Directions

  1. In bowl, beat bananas and butter until creamy. 
2. Add eggs and beat well. 


3. Combine flour, baking powder, baking soda and cinnamon

4. Add the flour mixture to banana mixture alternately with milk, beating well after each addition. 


5. Stir in nuts. Your cake batter will be on the slightly thicker side about that of brownie batter.

6. Spoon into cupcake liners in your cupcake pan. Bake at 350° for 16 minutes or until cake tests done.

7. It is that easy!!  Remove your cupcakes from the pan and allow them to cool on a cooling rack.  In the meantime make your cream cheese frosting.

Cream Cheese Frosting


Ingredients:
1 package cream cheese at room temperature
1/2 cup powdered sugar
1/2 tsp pure vanilla

Directions:
Put all ingredients in a mixing bowl.  Beat on high until light and fluffy. That's it...you're done!  Either spoon frosting onto cupcakes or place frosting in a frosting piping bag and pipe the frosting directly onto the COOLED cupcakes.

These cupcakes are delicious; I could not (and most importantly the kids could not) tell these didn't have sugar in them. Not crumbly, very moist, flavorful and the icing--don't get me started on that icing! I could eat the icing all by itself!
